Sure. Use a food processor for the carrots, potatoes and apples if you have one, makes it much quicker. Christmas Pudding 1 cup bread crumbs 1 cup suet (can get at coop) 1 cup flour 1 cup grated apples 1 cup grated carrots 1 cup grated potatoes 1 - 1/2 cup brown sugar 1 cup currants 1 cup raisins 1 tsp cinnamon 1 tsp allspice 1 tsp baking soda dissolved in a little water 1 tsp molasses 1 tsp salt Mix all ingredients and place in a baking dish - steam for at least three hours or more at 325 degrees. Vanilla Sauce 1/4 cup white or brown sugar 1 tbsp flour few grains salt 1 cup of boiling water 2 tbsp butter 1 tsp vanilla 1/8 tsp nutmeg (optional) Combine sugar, flour and salt in a sauce pan. Add boiling water gradually. Cook and stir over low heat until clear and thickened. about 5 mins. Remove from heat - add butter, vanilla and nutmeg.
