I have family who like Kapolei Chinese Restaurant. I can't vouch for or against it personally, as the last time I ate there was at least a decade ago. It was close to town-side Cantonese/Chinese food back then.

Far East Chop Suey in Waipahu. I haven't tried everything on the menu but I've never had a bad dish from there, also the pan fried squid is fucking amazing, and I don't even like squid

Ewa Pointe makes a great sam see cake noodle and their chicken salad is good. Their peking duck is good, not great. The crispy roast chicken is super salty. Also, the crispy gau gee is tasty. Taste of Hong Kong makes a good brisket with choi sum over chow funn (actually, so does Ewa Pointe.) I think their duck is better than Ewa Pointe. Overall, I like Ewa Pointe better.

so many chinese-american restaurants closed down in the last two decades, nationwide, because the first gen and second gen immigrants are retiring and their children and grand children were sent to college, not slaving away cooking up egg fried rice.
in my professional take out opinion, for chinese food, we're boned. its why most of us have moved onto vietnamese pho. because of an influx in vietnamese immigration.
sadder yet is when the non-chinese asian buys the restaurant from the retiring owners and tries to cook the same chinese-american food. then you start getting weird fusion thai/chinese/vietnamese menus and either they do one country's food right or all three are off in different ways. :(
