I used "covered learner", they do a few types of policy, and can insure you on someone else's vehicle, or your own, for a week or for months, and they also do specific days cover (over a week, you can pick 3 days to be covered etc) It was the only company that didn't seem a ripoff, and that would cover an older driver too (apparently only young people are learners lol) https://www.coveredlearnerdriver.com
