Fit it yourself. It's not difficult. You buy the wire adapter for the head unit and car, then bolt it all in place. Not like the old days when you had to wire it all in manually and figure out which wire was + and - for the speakers.

It might be worth talking to Parallel Imported. It's been a while since I last bought a car stereo from them, but they used to have a thing where an installer would turn up on Saturday mornings and install any stereo you bought from them for a pretty reasonable price. (used to be $50).
I also agree with Wishwush. Bluetooth is a form of short range wireless data transfer, in car stereos it's used for connecting smartphones, ipods, tablets, or ipads etc. You can either use it to play music through them (i.e. Play music on your ipod and the sound comes out your car stereo), or some will function as a hands free kit. It may also be useful if you use something like google maps rather than a GPS unit.
It may not be something you need right now, but the extra cost is minimal, and if you ever find you do need it, you'll wish you had it.

If I'm not too late, try sound around out west, very helpful to deal with. I think they charge $50 plus parts for install if bought from them, or $80 if not, again excluding parts. If you go see them they can give you all the adaptors you should need. Website: www.soundaround.co.nz

Just some things you can consider regarding your single slot car stereo upgrade...
In car entertainment ie DVD players are quite cheap these days, they can slide out from a single slot, ranging from about $300-1000 I believe.
Bluetooth is a must have feature, will not add much to price tag and beats buying a separate machine to make/receive calls while driving legally.
Driving sound on dominion rd is fast and easy but expect to pay a premium price (+20-40%).
If you see a stereo you like grab the model number and google it with a "site:*.nz" added. Might help you get cheaper price.
Installation of basic models costs about $50-150.
There are too many choices and things get outdated too quickly for me to recommend you any particular model.
