There is a new butcher shop in Lafayette Village, just south of Falls/540. I spoke at length with the owner and he is very much into the craft. He breaks down whole animals and uses them all. He does not do the pre-packaged primals, etc that other "butcher" shops do. If there's something you want, he will get it. But you will pay for it!

There are some meat vendors at the Farmers Market. I hear the best butcher in the state is in Asheville, but don't have a name for you.
