Oh man, I haven't even thought about this process for many years - good times. Depends on your budget of course, but check out Metalmark in LoHi - right down the hill from Little Man. They can be expensive but they have some really unique engagement rings there and they're really friendly. You could also go the vintage route - check out http://www.victorianajewelry.com/ in Larimer Square as they have old, unique rings you could check out.
My honest opinion: It's the new cool thing to say diamonds are worthless, but if that's what your GF wants, my personal opinion is to get a cheaper diamond and spend money on the band. Don't go for the really high-grade diamonds because nobody will even notice. Trust me on this...

We just spent a few hours with the folks at Sarah O on Tennyson. We choose them because they seemed to be one of the few locals doing custom work within our price point. I was impressed at how well they stuck to the budget we gave them, often showing us less popular types of stones to add variety / size to what my better half thought she wanted.

I would personally look online and at diamond alternatives. You can always buy a ring in person and have them set an alternative into the ring. Not sure what your price range is exactly. Don't listen to any sales tactics, your ring doesn't appreciate, you don't need insurance add it to homeowners or whatever, you can negotiate on price. Lastly make sure you shop early a lot of rings take a couple months to deliver. Don't overspend.

I used to work for a major jeweler in the city, won’t say who because I loathe the guy. There are a ton of diamonds and gems out there in the world and all of the ones sold by a jeweler are the highest prices you’ll find because of their markup. Go to a reputable jewelry consignment or antique store for an inexpensive and top notch ring (William Crow, Musselman-see Lanette, American Gem Registry). Make sure they have a GIA cert for the diamond. There are a ton of designer rings in consignment stores for a fraction of the cost they would be new.
But before walking into any jewelry store, do your own research beforehand so you don’t get had. Jewelers are usually worse than car salesman and will tell you anything for a sale. Know what size, color, clarity and cut of diamond or gem you want and what the price should be around. Make them show you the diamond OUTSIDE of the setting and ask to see their loop to look at it. Some places will cover a crack or imperfection with the prongs on the mount. You don’t need any training for this as a major imperfection will be obvious. Depending on the price point you’re looking at it might also be advantageous to bargain for a free appraisal to go along with the ring if you want to get insurance for it.

ShaneCo has been great for us. No commission so no pressure. My wife recently had to have her ring resized and they did it for free as part of the warranty and it came back looking brand new. I had lost my wedding ring jumping into Grand Lake and went to ShaneCo for a new one. In and out in 20 minutes. Told them my budget and what I wanted and that was that.

If you feel you have enough knowledge to understand the specs, the best prices are online. Stay on the reputable end with Blue Nile or Costco. Even if you don't go that route, they are helpful to understand what the cheapest price points are for a given set of specifications.
