Roti family items like methi paratha, regular paratha, lauki paratha cooked in a lot of oil will stay good at room temperature for upto five days and if refrigerated for weeks. Depends where you're flying/driving from, you may make khichdi and freeze it and thaw and warm in the hotel provided microwave. You may carry bread and some basic sandwich items and quickly throw things together in your room.
