Chinese food isn't really known for vegan food tbh. The closest I can think of are vegetarian restaurants catered to Buddhists, although idk how many of their options are actually vegan as I don't frequent those places. Even in the San Gabriel Valley, they're pretty rare.

SGV and Rowland Heights are probably your best bets, but they're all relatively far away (30-45 minutes without traffic).

Although it is a delivery app, but you can look up restaurants info and find one you like. Most of them are real Chinese food. Some restaurants may offer vegan options. Chaocai (炒菜) dishes are vegan. But they are wildly overpriced.
