I'm from Colorado Springs, but I didn't really discover Japanese food until I moved to Fort Collins. A friend who still lives in Colo. Springs recommends Sushi Ring (1861 S. Nevada Ave.), and it has good reviews online. Might be worth a try!

Further from this friend: "I like the Famous and Mackenzie's (both steakhouses), The Rabbit Hole (Colorado-type, some wild game, lamb, etc.) Edelweiss (German), Carlos' Bistro (fancy schmancy) and Blue Star (tall food) is fun. People go nuts for this tapas place called Nosh, but I don't like it. For something more casual, there is a fun cafe/drinks place called Shuga's, Sonterra (a Mexican Fusion place), and McCabe's (English/Irish pub)." I have no idea what "tall food" is.
