Can anyone recommend a motorcycle mechanic that works on vintage bikes? I've called a few shops and haven't been successful in finding one that will work on a motorcycle...

If you have a basic set of metric hand tools, you are honestly better off doing the work yourself. Vintage bikes are fairly simple to work on and you can find full service manuals online. Also you can inquire over at /r/motorcycles What exactly are you needing done?

I've been looking around myself. There used to be a guy in South End that did some work on my '76 CB but he's not there anymore. I've had to do some stuff myself, but I don't have the tools or the know-how, even with a shop manual, to sync the carbs and stuff. Good luck finding somebody, I'll let you know if i come across anyone.

Also I live in Southend and could maybe help with some things. I just re-did all the ignition system for my 81 cx500c. Luckily bikes that age have very little in the way of regulators and resistors so testing with you multimeter with the help of forums and other Honda sites will gain you a lot of knowledge.
You mentioned you were buying a DMM and, honestly, I found they are only as helpful as your knowledge of electric systems as you need to measure resistance on some things and voltage on the others. I wish I had a link to a good learning course on this as I very much want to know more too. Even still, when it comes to testing whether or not a wire has lost its way you can do very easily.
One comment mentions South End and is referring to Caleb who used to run South End Cycle Works. I haven't seen him around in a while and I know his shop isn't open any more, at least where he used to have it, but I'll keep an eye out and see if he's still doing work. He was very knowledgable and very honest and even let me use his bike trailer for free once.
In my experience though, there's a ton of forum info for old Hondas that should guide you in how to check stuff, just may take some extensive googling. Good luck and I hope to see you out there!

There's a Trek shop in ballantyne, never been there tho. Bicycle Sport on Selwyn Ave has some good guys working there. Listing a few more: Uptown cycles, Bike Source is pretty big so turnaround might be faster but they mostly sell Specialized. Prolly some others I can't think of rn

Almost all bike shops will have some selection of used bikes, and even if they don't have what you're looking for, talking to the right person may net you what you want. And since you don't really know what you want, talking to an honest to goodness bike shop will be a lot more helpful than trying to just look at used bikes. For all you know, a new bike might meet your needs.
First place I'd try for a used bike in that price range is Bike Gallery in Dilworth on Park Rd. Then try Ultimate down in Matthews. Bike fit wise I would probably recommend Bicycle Sport in Myers Park. All the other shops listed are EXCELLENT, but in terms of biking fitting the guys at Bicycle Sport are top notch. Make sure to ask for Ben Cooley

There's a trisports and a performance bike on the south side and there's "The Right Gear" in Concord which is basically on the northeast side. The right gear is your best bet for pro shop work.
