This may not be quite what you're looking for because it's a camping spot rather than a hike, but the Table Mountain Star Party used to hold their big annual event on Table Mountain, NW of Ellensburg. It has wonderful dark sky and a low horizon. Several years ago there was a devestating forest fire, and because of the fragile ecosystem during recovery, the organization has moved the big 1,000 person event to private property in Okanogan County for the time being. It may be possible that individuals are allowed up Table Mountain now, but I don't know. I do know it's an incredible place to camp & look at stars though! Cascade Pass and view from the parking area. It is isolated in the extreme. You can also hike into open alpine areas from there.

Nik Jensen And Mt Baker is pretty clearly out of any sort of ambient light zone (or, it was, based on the map RRJ posted). Sounds like I have Table Mountain, Baker Railroad Grade, Cascade Pass, and Ranier on the sunrise side to choose from. I second Cozy Canine. They are awesome. I took both of labs there and she has an inside kennel big enough for both of them. Even gave them a bath because they got muddy.:)
