I spent about a month tracking down a new road and mountain bike and managed to snag a Domane AL4 and an X-Caliber 8. They were literally the last two mid range Treks in my size within 500 miles and not even my top choice as I was looking for an AL5 and XC 9. I was told that If I wanted to preorder their of those I'd see delivery in April. Of 2022. Yes seriously.
Shit is going incredibly fast if it's not all already gone. Like literally the second a store gets a scheduled order in, someone is putting down 50% to reserve it for the day it actually gets to the shop.
So the deal is, put together a list of bikes that would be acceptable to you and then call every shop within your maximum driving distance and go down the list of what's coming in over the next few months. If someone has something coming in, drive your ass down there on the spot and put down a deposit. Do this once a week until you find something. Don't be afraid to look in Wyoming, Utah, Kansas, etc. And if you're willing to drive even farther, Iowa has tons of bikes.
Or keep trying Facebook marketplace and Craigslist. I just sold a Specialized MTB in craigslist and legit got 8 emails a day about it (with the normal flaky craigslist bullshit). I got a lot for it. Like $600 over what I would have gotten pre covid.

They have really impressed me with their bike selection through the pandemic as the owner does a great job keeping things stocked. The brands they carry include Cannondale, Salsa, and Santa Cruz just to name a few.
